Mustard is normally obtained by grinding the seeds with vinegar, wine and various spices.
Costa Ligure instead used the whole plant of the mustard producing a semi-finished product similar to that done for the other vegetables
In this way the green mustard is fresh, not pasteurized and is able to maintain the typical organoleptic characteristics of the plant itself.
Moreover, not being subjected to pasteurization it maintains the following properties:
– reduces blood sugar and improves the levels of LDL cholesterol;
– is a powerful detoxifier;
– has a protective action for the heart as it is rich of omega
-improves the circulation
– has digestive properties.
It goes well with meat, fish, and vegetables … and why not?!? It can replace traditional sauces in tasty sandwiches!
